  3. Fry the trotters pieces in the pot till evenly covered in caramelised sugar.
  4. Add ginger pieces, star anise, cinnamon bark to the pot, stir briefly, then add 1 bottle of Tsingtao beer (or any clear beer) till boiled, add 1 chopped leek (in pieces approx 4cm long)
  5. Cover the pot and slow cook for 2 hours
  6. Remove the star anise, cinnamon bark, Ginger and leek from the pot, then turn up the gas till boiled.
  7. Add light and dark soya, garlic, and salt into the pot, and another tablespoon of sugar (or more if prefer sweeter taste). Boil down the liquid till sticky
  8. Add chopped spring onion and serve
